1. Introduction
1. Mono/Sesquiterpenes
People have isolated organic compounds from plants since antiquity. By gently heating or by steam distilling certain plant materials, one can obtain mixtures of odoriferous compounds known as “essential oil.” These compounds have had a variety of uses, particularly in early medicine and in the making of perfumes. The word “essential” as applied to naturally occurring organic substances can have two different meanings. With respect to fatty acids, “essential” mans “necessary.” For example, linoleic acid is an “essential” fatty acid; it must be included in the diet for animals to grow properly because they lack the ability to biosynthesize it directly. “Essential” is also used as the adjective form of the noun “essence.” The mixtures of substances that make up the fragrant material of plants are called “essential oil” because they contain the essence, that is, the odor, of the plant. Hydrocarbons known generally as terpenes and oxygen-containing compounds called terpenoids are the most important constituents of essential oils.
