Taquitos Dorados - Luis Be (Mexico)
1 Medium chicken breast.
20 corn tortillas.
1 onion.
1 dash of black paper.
Salt as you desire.
2 cups of vegetable oil.
1 cup of sour cream.
1 cup of cheese (it can be Mozzarella cheese or another grated cheese).
4 cups of sliced lettuce.
4 cups of water.
1. Put the water in the saucepan on the stove. When the water is boiling, add the chicken breast,
cooking for 15 or 20 minutes. When the chicken is cooked shred it and set aside.
2. Slice the onion and put half of it in the frying pan with two tablespoons of vegetable oil, when
the onion is cooked add the shredded chicken, the black paper and the salt and stir it very well.
3. Put a little bit of chicken in each corn tortilla and roll it up (this way you get the taquitos).
4. Put the oil in the frying pan, when the oil is very hot put 4 or 5 taquitos in there (it depends how
big the frying pan is). Wait till the taquitos turn into a golden color and take it out. Put the
taquitos in a colander for a while to drain the oil.
5. Place 5 or 6 taquitos on a plate put the sliced lettuce all over it, add the sour cream and spread
cheese on it. Enjoy it! (You can try with hot sauce).
Lomo Saltado – Jacqui Clarke (Peru)
2 pounds of beef tenderloin or other tender steak.
¼ cup red wine.
2 tablespoons of crushed garlic.
2 medium onions cut in strips.
4 tomatoes cut in strips.
5 potatoes peeled and cut into strips for frying.
1 jalapeno pepper cut into thin strips.
1 tablespoon of vinegar.
Vegetable oil for frying.
Salt and pepper.
Finely chopped parsley.
1. Cut beef into thin strips and marinate in wine for 1 hour.
2. Cook garlic in oil over medium heat and add meat. Reserve the juice.
3. Add the tomato, salt and pepper. Cook a few minutes.
4. Add onion, jalapeno strip, parsley and vinegar. Combine the juice
from the meat.
